The Chef

Precise, unfussy, and never the show.

Chef Hoon Lee came up through fine dining — Redbird in LA, most recently — and he’s spent that experience earning the right to leave the formality at the door. His food here is precise but unfussy: clean flavors, real technique, nothing that needs a three-paragraph explanation from a server. It’s food for a room with the lights down and a record on. It’s good — it’s just not trying to be the show.

A NOTE

Kasai is a bar with a serious kitchen, not a restaurant with a sound system. Come hungry enough for a few plates and a couple of drinks — not a five-course sit-down. The record’s still the headliner.
